Description
After seeing these unfamiliar plants all over Montana on a recent trip, my husband and I returned home and were going through some of our pictures and decided to see if we could identify them. As it turns out, this is a salsify plant. Apparently, there are several varieties and they are quite common in certain areas of the country, including the northwest. The roots are edible and there are flowers that appear before they get to the stage in the photo, which is a large seed pod. (WHO KNEW?) Anyway, it's just way too late for us to call these fascinating plants salsify because we spent ten days referring to them as "giant puff balls!"
